Throughout the 25 years living in the USA, the flavors and smells of Morocco, my native country, have always been present. Whenever time allowed, I would bake Moroccan goods for my children, friends and colleagues to recreate with them those precious childhood moments spent in the kitchen of our family home with my mother Khira, and my sisters.

Almonds and honey were the basics of most of these cookies, so varied in flavors and textures. Hand preparing and mixing so many noble ingredients such as cinnamon, Him Arabic or orange blossom water was an unforgettable pleasure to smell and taste.

Now that my children have left the home nest, I have time to prepare and share with you the fabulous sweets of my childhood; certain that these little wonders will enchant your taste buds and those of your loved ones.
